What would the thoughts of you folks be on seeing a daemon prince that would be used as a sorceror missing the hand weapon be?

While I'm not sure I fully understand what you're asking, isn't a Daemon Prince a monster/monstrous creature (not sure which system you're referring to) so it's choice of hand weapon is moot unless you are purchasing a specific upgrade? Personally if the Daemon Prince had a preference for spell casting over close combat I'd be fine seeing him without a weapon.

Daemon Princes are generally really big models. Sorcerors are not. Unless I'm really misunderstanding you, I don't think it would work.
