So in a 1000 point CSM army are these too much to bring? If not which would be better to take?

Its never too much to bring! Either is a good choice. It depends what the rest of your army is, do you need a more damage, or CC or do you need the utility and armourbane from be'lakor.

2 cheap Cultist blobs, a unit of 10 NM with 2 BMs, small unit of Nurgle Bikers with a couple of Melt as and an LC/AC Pred. I guess from the HQ I was looking for someone who can swoop around making a nuisance of themselves and should they be grounded go for the assault.

Funnily enough, I ran Belakor @1000 this week.

Ended up against Waveserpent spam (well, three of them with associated DA, it was only 1000 pts after all)

He cast Invisibility on a unit of Screamers turns one and two, which meant they tanked more or less the whole of my opponents return firepower for two turns, for only a few wounds lost, killed a Waveserpent in CC before getting focused down himself in turn three, which by that time I'd had sufficient breathing space for the rest of my army to do its thing and make the result a foregone conclusion.

So, yeah, he can work!

Bel'kor is mostly a buff bot. He guarantees invisibility late.game he might land and punch up some people. He dies to smart missile systems and wave serpents with scatter lasers (but so does nurgle prince).

CSM nurgle prince can take a brand and spell familiar making them more reliable summoners (malefic) but with only 2 daemonology powers you get less chance at picking up cursed earth.

both are good. But fulfil different roles. I prefer to MSU so would take the nurgle prince over bel'kor. But its a close call. Invisible maulerfiend vs imperial knight is decent odds.
