So I'm drawing up long term plans for a 1850 point list that forges a narrative something like this:

There is some nameless AM force behind an ADL, and a vindicare assassin infiltrates into battle alongside a stormraven with some paladins dropping in to save the day. I don't want any named characters in the AM list because they will all be executed or put into work camps after the battle, of course, because the Grey Knights are too glamorous for word to get out about them. I'd also like an ADL to help this narrative of defending.

Any suggestions on what tanks to take, how to equip platoons, how to equip the GK deepstriking forces? doesn't have to be a storm raven or assassin, just something that comes in later, you know. Deepstriking or reserves or whatever

I don't have my AM codex on me, but I know that a mini draigowing would cost 1010.
That'd give Draigo, 5 paladins with 2 psycannons and psybolts, a Stormraven with Hurricane bolters and psybolts, and a vindicare. So that leaves 840 points of AM for your primary detachment.

I'd go with a command squad in a chimaera, then a double helping of platoons that have a PCS and 2 plasma squads. Depending on left over points, you should add 2 wyverns.

Rule #1 is Look Cool.
Rule #2 is Do Cool S*%* Even If It's Tactically Inadvisable
Winning is something like Rule #17.

Overkill is officially defined by the Commissariat and the Munitorium as: "The minimum amount of force that is to be brought to bear against the enemies of the Emperor."

only problem with that lsit as I see it is that he might have trouble against a heavy armor list

Opinions are not facts please don't confuse the two
