Ok so I have been playing Eldar since 3rd and the whole reason I started them was the exodites. I am in love with the concept and grew up watching dino riders and reading Cadillacs and dinosaurs and things like that. earlier this year I decided to man up and make the dream. So I wanted a competitive list and so I started making them as a jetseer council but its been a while and I honestly don't really want to run that. I have been to enough tournaments to know at this point that if I WERE to take them then people would groan and there is a chance to lose some sportsmanship just because of the army list, which I have issue with but whatever, I want to play a game that is run for both people. so after thinking on it a while this is what I want to run. I am trying to avoid using anything with Armor and stick with a jetbike theme.

5X3 Jetbike with Shuriken Cannon
10 Rangers

6 swooping Hawks, Exarch
10 Wapr spiders
9 Shining spears, Exarch, Star Lance, Hit and run

WraithKnight
Wraithknight with sun cannon
3X Shadow weavers

One thing that worries me is Knight titans and other Lords of war. I dont know how well I can take them on.. I could one wraithknight and the shadow weavers for my own knight titan, modeling it as the old eldar centaur knight. So what do you guys think?

Well, I would drop the rangers to 5 men and put a sun cannon on the other knight for more templates, or drop the rangers for a crimson hunter (use frost/flame Phoenix for this) and gives enough points for sun cannon on other knight with a few left for toys.

I cant drop the rangers for a crimson hunter because I have 3 fast attack already. I would need to get rid of one of those as well. why would I need a second sun cannon? if I do that I have 0 anti tank that isnt super close range.

You don't. Suncannons aren't that good except in a few select circumstances. Besides, it makes you want to shoot with your WK and not assault, but that's counter-productive. One is nice to have, as it WILL be a huge fire magnet (since unlike the HWCs one won't be easy to ignore as it's shooting is a lot more dangerous to most things) and you can use that to your advantage. 2 is overdoing it, imho.
