I am in the middle of building obliterators just as I cant afford to spend £30 on 3 models, but after seeing Jaidyn's one http://www.dakkadakka.com/gallery/346651-.html with only one gun do I need to show every single weapon an obby can use or can i put just a few on so its not cluttered or do I have to show each weapon an obby can pull out?

Have as many or as few guns as you want. The GW kit doesn't include every gun available to them (plasma cannon, multimelta), and a few they don't get (bolter, something resembling a heavy stubber). Having one gun should be ok, so long as the model is easily identifiable as an obliterator.

While Jaidyns Obliterator looks great it's missing the Bulky / Slow and purposeful look. Though that's just my opinion. Most people just take a base terminator kit and Green Stuff all kinds of weapons to them.

Yeah, so long as there's no confusion that it is an obliterator (as opposed to being a terminator or a havoc or whatever), you can model it any way you like. The most common options are GW's I'm-carrying-lots-and-lots-of-weapons look, or a single 'mutating multi-cannon' look.
