Hey there,
I bought an Eldar farseer out of fun and started to paint him. And I'm loving it. I thought about building an eldar army (750) pts and need a little help.
My priority here is to build an army out of models I like. Winning is not a must, but winning once in a while would be nice
Models I like:
Wraithguard
Dire Avengers
Rangers
Swooping Hawks

Two squads of 10 Avengers walking, MAYBE a Wave Serpent between them. The Wraithguard would need a Serpent without question and spend the rest of the points on Hawks and maybe some War Walkers or other heavier option. Sadly, Rangers aren't that effective and it's only in 1500pts that I'm going to be including Alaitoc Pathfinders in my own list. Just plain Rangers are meh at best. But that sort of layout could give you a fun game that should still net some wins against simple 750pt lists.

10 Dire Avengers
+ Serpent, TL Star Cannon
10 Dire Avengers
5 Swooping Hawks
3 War Walkers
750 pts

Whenever you take a serpent you should try to give it Holo Fields. Another valuable upgrade if you've got points to spend is the Ghostwalk Matrix. It allows you to park the vehicle in difficult terrain (like ruins) to attempt to gain a cover save without needing to jink and snapshot the following turn. Also taking Scatter lasers on a Wave serpent gives it's secondary weapon (shuriken cannon if you take it) and it's serpent shield the twin-linked ability, making for a pretty mean gunboat.
Swooping hawks are best taken in squads of 6 or more as this allows them a large blast template when arriving via deep strike instead of a regular blast template.
Basic war Walkers are okay in a 750 point game, but you'll usually want to upgrade them with those cheap heavy weapons to suit whoever you're playing against. Lances for anti-tank, scatter lasers for most anti-infantry, and occasionally starcannons (i like them against necrons and marines).
That list is relying entirely on swooping hawks to destroy any vehicles your opponent brings, which can be risky.
Maybe alter your list to this:
Farseer - singing spear
10 Dire Avengers
+ Serpent, Scatter Lasers, Shuriken Cannon, Holo Fields
10 Dire Avengers
6 Swooping Hawks
2 War Walkers - 2 Bright Lances Each
746 pts
Take the walkers as one or two squads, whichever you prefer. Squad of 2 helps to avoid first blood, 2 squads of 1 gives you more options for an alpha strike. The Farseer goes with the walking dire avengers to twin-link the war walkers and cast whatever other buffs he rolls. Swooping Hawks start the game on the table hidden away, then jump off first turn to guarantee a 2nd turn deep strike blast template (and/or objective grab).

Wrong wave serpent configuration, and you need at least 6 swooping hawks.

how to equip the dire avengers and should I put a exarch in each of the 10 man groups?

The Dire Avengers themselves don't have any options, and in small point games it's more efficient to leave the Exarch at home - 10 points for the extra attack and ballistic skill is almost enough for another plain avenger, before you start adding any of the expensive upgrades - the Shimmershield can be useful in a full squad against AP4 ignoring cover weaponry (such as heavy flamers or Heldrakes), but will rarely make it's points back otherwise.

If you want to win 750 point games I would take
1x spiritseer HQ 70pts (take both primaris, attach to)
5x wraithguard 160pts in wave serpent with Scatter Laser plus Holofields plus Shuriken Canon 135pts
5x rangers ( infiltrate) 60 pts
3x Vaul Support Shadow Weaver 90pts
1x Wraithlord with 2xBL and ghost glaive 165 pts
1x War Walker with 2 scatter lasers 70pts
Not exactly a conventional list but should work fairly well, run under fliers until board yours then shoot fliers last

I'd take a list consisting of
Jetseer
2 units of DA in Serpents (tl scatterlaser, shuricannon, holofield)
Warwalkers w/ dual scatterlasers.
The Jetseer could improve the shooting of the Warwalkers via guide or prescience.
Moreover, the Serpents will very resilient at this pt level dut to the Lanchester square law (doubling the tanks means the enemy must 4-fold his heavy weapons).

Please help me further with this list. I don't want any finecast models. It's not supposed to be competitive. I just want it to be fun to play with.

dont have codex for exact points but you can fit 2 serpents with 5 DA each, kitted properly IE scatter lasers and holo fields, a farseer, and a full unit of warp spiders with a few points left over. that would be a NASTY 750 list.

The list bojaz gave is likely your best bet. Keeps the models you like and streamlines it for a chance on the table. As far as finecast goes, eBay is your friend. It shouldn't be difficult to find older metal models. It's easy to find them just base coated as well so paint doesn't need to be stripped off either.

Just a heads up your list rings in at 745pts.
If you are really just wanting to add a Dire Avenger Exarch. Then you can always just cut one of the squads down to 8 models. This frees up an additional 26 points add the five you've already got left over for a total 31. This will get you a DA Exarch with Power Weapon and Shimmer Shield on one of the squads. Bringing your points total to 749.
Farseer - singing spear
8 Dire Avengers
+ Serpent, Scatter Lasers, Shuriken Cannon, Holo Fields
10 Dire Avengers - Exarch, Power Weapon / Shimmer Shield
5 warp spiders
2 War Walkers - 2 Bright Lances Each
749 pts
Anyway just a thought. Good Luck.

It might not be some thing you're interested in but I have been using some subtly converted and painted plastic Dark Eldar scourge models as stand ins for the Eldar swooping hawks.
Depending on your colour scheme and general feel of your army I find they fit in fine.
I've done the same with jet bikes too.
