In the stats it says 3+ for armour save but in the war gear it gives you mesh armour which is 5+ so does that mean that they get 2 armour saves?

No, you use the stats for the bike.

WEll yes, you DO have two armour saves, however:

1) More than one save states you only take one save, ever; and
2) You are always forced to take the better save, meaning you will never use the 5+ save

This really only matters when you put a Farseer / Warlock on a bike. They have either the 3+ or a 4+ inv when on a bike

Oddly enough, having multiple armour saves might matter if the model is wounded by ES.

The mesh armour is really only there for fluff purposes.

So would a grav weapon wound on a 5+ or a 3+ then?

3+, as they always have the benefit of the better save.
