If yuo really want a crusaders feel just look up Teutonic or knights of the crusades in the middle ages. Push comes to shove go with the expected Knights Templar.
I think the Bretonians models are more based around the era or the Crusades.
It'd recommend looking up some books on the Crusades or if you're desperate watch a movie with lots of good visual sources like Kingdom Of Heave (although I'm not sure how historically accurate the costumes are).
