Can my opponent shoot at my space marines after they make an emergency disembarkation from a rhino. Please note I mean with the remaining weapons on that same vehicle/models in that unit?

I don't have my book on me atm, but I would say no. Unit A's original target is the Rhino. Once that is gone, they cannot shoot at another unit unless they have Split Fire or a similar ability. Any other unit is free to shoot at the occupants though.

Yup, you declare a target for the whole unit. You can't change your target halfway through the unit's shooting.

This is fantastic, so basically an enemy is spending whatever points that entire unit was on popping a Rhino per turn, lol. I love it. I'm taking as many as I can fit, which I believe is 8 at 1500pts for my sallies list. Thanks!

Splitfire counteracts this, yes? I.e. a squad of DW could pop the Rhino with say a PC and then have the others open fire on the disembarked unit?

No splitfire explicitly says that the unit cannot target a unit forced to disembark because of the model that split fired.

Split Fire and Target Lock (Tau wargear) let a model fire at a different target from the 'main' unit, but both are declared when you pick up targets for the unit - when you destroy the rhino, the split fire/target lock model already had a valid target - so they cannot attack the people inside when the rhino goes boom.
1. Nominate Unit to Shoot. Choose one of your units that is able to shoot but has yet to do so this turn.
2. Choose a Target. The unit can shoot at an enemy unit that it can see.
3. Select a Weapon. Select a weapon the firing unit is equipped with. All models equipped with a weapon with the same name can now shoot that weapon at the target. Every model that wishes to shoot must be within range of at least one visible model in the target unit. Models that cannot see the target, or are not in range, cannot shoot.
Notie that when you choose the target for your unit, you do it before selecting a weapon - the targets of a Target Lock/Split Fire model have been chosen as well (targeting another enemy unit)

While the end Result is actually the same the two Rules in question do function completely differently to each other. Split Fire is one Rule that was updated to contain a very specific Restriction because it has always contained a version of this line: Once this shooting attack has been resolved, resolve the shooting attacks made by the rest of the unit. The most curious part is they could of taken the time to completely remove the Split Fire Special Rule's wording and replaced with something more stream-lined the 7th Edition system of weapon groupings, such as having the Weapon benefit instead of a Model so it is a different weapon group and nothing more, but they did not. In any case, answer is no all around.
