Hello! I tried searching the forums before posting but didn't find much useful info on this.
So basically I have a friend who plays wolves and now has bought a knight. I am having a hell of a time killing it!
I have the following races:
Necrons (which you think would do well glancing it)
Dark Eldar (lances are bad vs it)
chaos demons (bad vs armor)
What are some good tactics/units I can use for this. I still want to make TAC style lists but need help.
He also uses thunder wolves and the new flyer to drop off assault units with drop pod back up. Fast list!

Necrons - Haywire from the Harbinger of the Storm Crypteks work great. A couple in a warrior unit in a night scythe should help.
Nemesor Zhandrehk can bestow Tank Hunter.... this turns gauss weapons into knight eaters. I have seen people use the Vargard teleport and rapid fire tank hunting gauss weapons before with success.
Chaos Daemons - Belakor, Slaanesh DP/GD with Iron arm and lash, Soul Grinders can be ok.
DE - Haven't played with them much, but I'd think with the superior mobility you should be able to get some lance shots on a non-shielded side. I have seen knights go down in 2 shots... Again YMMV, but a couple well placed AP2 or 1 shots can do the trick.
Also, mitigate the damage the knight does by making it move through terrain, slowing it down incredibly (3d6 pick highest instead of 12"). Tar pitting can work surprisingly well. It is very dependent on your enemy not rolling 6's on stomps, but I have had 2 wraiths hold up an Imperial knight for 3 game turns of combat. YMMV but it was awesome. My buddy used nurglings who had the grimoire and cursed earth on them (2++) to tie up an IK this past weekend at a GT.
This is just off the top of my head. I'm sure there are more solutions out there too.

Watched a Necron vs. Knights bat rep over on Frontline Gaming's Youtube channel. The guy had 3 knights and some IG. The Necron player took 3 or 4 CCB and some Nightscythes and did pretty well against them.
With DE, mobility, DSing, and Haywire are you best bet. Pens are good, but you can still glance it to death.
With CSM, its a bit harder, but anything with a lot of high S AP1/2 shots would be good. Maybe some Soul Grinders to smash it in CC.

Necrons should have no problem. Guass and haywire everwhere.
DE are going to have a more difficult time. Scourges with haywire blasters are good, if difficult to keep alive. Dark lances are not great but will hurt it. Jetbikes with haywire/heatlances perhaps.
CD can't deal with a knight very well. Be'lakor can do it, but its risky. Screamers, particularly if buffed with grimoire, can keep it busy for a while and take hull points off it. Soul grinders with invis and/or grimoire are also useful.

Hmm, as a Wolves player I can say that your opponent is running our strongest units and making them better with the addition of the Knight. You're going to have to prioritize one of those 3 targets or you're going to suffer for it.
The Knight is powerful, but its shooting output is a tad low for something that costs as much as 2-3 average units. You can probably afford to let it slide for a while. I'd go for the TWC, because they just shred units they catch, are super fast and can die fairly easily to weight of fire or bad luck if they aren't throwing in Iron Priests or Wolf Lords to tank wounds. The Stormwolf squad should probably be taken down before they disembark, but they're really the last priority imho.
