Hi, I'm new to tabletop gaming and warhammer as a whole, I've always been interested in this game and think now would be the best time to go at it.

I wanted to play a combination of the imperial knights as my main army and run as many storm troopers and an HQ from the Imperial guard, I was wondering if this was possible to do.

I was going to start with buying up to 1000 points and then try to gradually expand up to 2000

If such an army would be possible to create with the knights still being the bulk main army with maybe some conscripts, as many stromtrooper as possible maybe with Creed and his ogryn buddy.
Conscripts to fill the void I think.

Sorry I'm still rather new to this would this even be possible as an army, or am I missing something? Any help wold be appreciated as I'm an obvious newfag.

It's possible. Knights are tough and effective. You could go with an Adamantium-or-something Lance formation. 3 knights with better invulnerable saves when packed together.

But i'd recommend you to start with just one and some troops. Not many people will be happy to face a bunch of knights and nothing more. They're hard to deal with if you're not prepared or don't have a type of army capable of tarpittin and ignoring them all game - which ain't easy with stopmps. So, depending on your meta, you might get no games cause they're that devastating it won't be fun no more for a casual player to face them and get his ass handled back to him time and again.

1 is not that bad. Need to ask the local guyz first.

Sorry to bother you, but could you tell me the basic army set up using the two together? Never built a list before. Say like a standard point number like 2000 points?

There's no standard point number. You play armies as large as you want. Usually rounding up to make a beautiful number. Like 500 pts, 750 pts, 1000, etc. New players usually play around 750-1k at first. Than move on towards larger games or remain the same floating around 1k-1250 depending on what they want and can get. Many tournaments use 1850 pt limitation.

Personally i play around 1250 cause otherwise it's just taking too long with my footslogging ork horde. Even so, if the game ends in 3 hours - it's gone really fast. While for your 3 knights and a bunch of deepstriking guyz facing something like a player with 5-6 tanks and some min squads, it'd last like 30-60 min in general.

First, you need to decide what allies you want. If you want them to be scions (like imperial guard SWAT), they can go in a few deepstriking squads with plazma/melta. If you want to field some vehicles and tanks or a mass of men, you're better off with just imperial guard. They've got solid vehicles and lots of cheap bodies. Personally, i think it's a better combination than elitist scions but it's gona require more money+time investment cause the ammount of models will be significantly higher.

You could go for someone like space marines. Drop pods with regular guyz work great to take controle of the field or disrupt the enemy's resistance and ability to harm knights.

Basically, all works with Knights. Choose what you like the most aestethically. Read some background material.

The Tempestus 'codex' might do you as a good army to go with the knights.
'Astra Militarum' (or whatever the IG is now called) can run Scions, but they aren't troop choices in that codex.
You could just run an Unbound force, but you miss out on getting Warlord traits, I think. They can be quite useful, but are often near-useless.
If money isn't a problem (you're running a Knights army after all) I'd say to get the Tempestus codex if you want Scions squads, and expand into the AM/IG codex later.

Points for the games depends on your opponents. The club I play at usually play games at around 1000 points, up to 1500. Sometimes there are 25000 games, in the 4 hours we get.
