I've cleaned up your list a bit to make it easier for people to read. You don't need to include things like "ramshackle" for your trukk as that's not an upgrade, it's mandatory. Same goes for Stikkbombs. The trukk had Red Paint on it, it's 5 points for an extra inch which can be put better elsewhere. With how many boys yo have, do yo uhave a Painboy? They're ALOT better in a list like this and I would highly recommend investing in one. At only 50 points, it's a steal.

As your foot slogging it, 2 groups of 30 boys tend to be more effective as your opponent will be stuck in combat longer. Ork shooting is, in the volume of 60 boys, quite effective. I would maybe suggest getting Shoota Boys with Rokkits. It's 6 Rokkits and they're much better than Big Shootas. Or at least one mob of shoota boys and one of Slugga boys so you have an alternative option when you come against something with fear. Monsterous creatures will ruin your day with Fear.

Also I would advise getting a Waaaagh! banner for your Nobs (assuming your Warboss is going with your Ork Boys. A Warboss and Nobs in a Trukk are key targets and will be destroyed first turn).

What else do you have to play with?

units of nobz are generally a bad idea

i'm not so thrilled about a warboss without bike or megaarmour

if i would start off with an footslogging ork army i would include:

    - warboss on bike
    - warboss with megaarmour
    - painboy (works great in a 30 ork mob)
    - meganobz
    - 30 sluggaz
    - 30 shootaz
    - couple of trukks

with this you can build the base of many good lists.
    Spoiler:
    for example:

    warboss
    megaarmour, DLS 125

    painboy 50

    3 manz
    bosspole
    trukk, plank, ram 180

    30 sluggaz
    nob, powerklaw, bosspole 220

    30 shootaz
    3 bigshootaz/rokkits, nob, pk, bp 265

    840 points

then i would think about stuff like tankbustaz, bikes, koptaz etc

proxy some of it, play a couple of matches and see what works best for you

just a couple of "nomatterwhat" for ork armies

    ALLWAYS give nobs a bosspole
    ALLWAYS use rams on vehicles
ALLWAYS take the free rokkit-upgrade on vehicles

Pretty much everything you've just said and a bit more:
*when fielding in a Non-nob only unit. So maybe something like "1 nob per unit must have the BP with the exception of a Waaaaagh! Ghazzy's formation: "Green Tide" where BPs should be allocated to 2/3 nobs."

Furthermore: Always give the Warboss in Mega Armor Da Lucky Stikk. ALWAYS. Never any buts. ALWAYS. If you can't afford Da Lucky Stikk, then you shouldn't take the Mega Armor.
Mega Armor isn't fantastic for a footslogging army as it stops them from running. Running is key. There was another guy asking for a list earlier today. I suggested something like this:

    HQ 1 = Warboss + Eavy Armor + PK + Finkin Kap = 105
    HQ 2 = Painboy = 50
    Extra = Mek = 15
    Troops 1 = 30 Shoota Boys + 2 Rokkits inc Nob + PK + BP = 260
    Troops 2 = 30 Slugga Boys + including a Nob + PK + BP = 220
    Heavy 1 = 5x (KMK + 2 Gunners + 1 Ammo Runt) = 195
    Heavy 2 = 3x (Traktor + 1 Gunner + 1 Ammo Runt) + (1 Kannon + 1 Gunner + 1 Ammo Runt) + (1 Kannon + 1 Gunner) = 153
    Total = 998 Points.

The above list was for a competition at 1000pts. I've learnt to update people's lists on what they have in it as I don't know what else you have access to and I would rather not tell you to buy more models as Warhammer isn't a buyer's best friend. But yes, Nob units these days aren't that good. Your original list lacked any Anti-Fliers. At 1000 points, hopefully you won't see any, however an alternative to Artillery would be Lootas. They're not nearly as good as Traktor Kannons at taking down Fliers (tho the Traktor Kannon is THE BEST antiflier in the game), Lootas are good at different things.

i wouldnt say allways... yes, a MAN-warboss with lukky stikk is near invurnable to small arms fire, but sometimes a warboss on a bike is more in need of a better save. the DLS would give a biker-warboss essentially a (pseudo) 3+ armour-save and a 3+/2+ jink-save

That is VERY pseudo. A 4+ Re-roll is better than a 3+ IMO, but if you have both a Warboss Biker and a ManzWarboss in an army together, you're best putting the Stikk on the ManzWarboss.

I say this because of what you would generally field with the Warbosses. A Biker Warboss is more likely to either go with Deffkoptas or Warbikes, both of which aren't designed for CC. At best, your only giving 15 Warbikes +1 WS. I would prefer to put the Finkin Kap on the Biker Warboss as outflanking 15 Warbikes to get in a better place to shoot at something, or attack vechiles rear armor, is really good. That is IF you have both a Biker Warboss and a Manz Warboss in the same army. But then you'll need to go into another CAD for Painboys. I can't ever see myself running 2 Warbosses in a single CAD list, not in 7th ed.

Manz typically work best with Ork slugga boys from my experience. If he's put with other Manz, then he becomes too much of a target. Their vechile explodes and they're left to walk places. If an AP1 or AP2 weapon is fired him, the Manz CAN LoS but you'll be loosing an expensive model in the process. And your only giving +1 WS to 3/4 models, which is somewhat of a waste.

So via a Battlewagon, you'll get the Warboss, a Nob, a Mek (to soak up challenges) and 16 slugga boys. That's 19 units all getting +1 WS who REALLY want to get into combat. Compared to Bikes who want to use their Twin-linked Dakkaguns to kill people.

The Biker Warboss DOES work with a Lucky Stikk and I would run him with it. But in the same list, I would 100% always put it on a ManzWarboss. Otherwise you'll have to rely on a 5+ FnP from a 2nd CAD's Painboy or a 6+ FnP from Cyborg Armor, which is just shoddy in comparrison.
