I guess it depends on the Knight. I've only faced one, and it was the least expensive varient. I've yet to actually get the book, open it up and see what they have avail to them. I've face that variant twice. The first time, I tried to kill it. That was a huge mistake. It's a monster in CC and not much I had could do a thing to it.
The second time I fought it, I ignored it for the most part, focusing on objectives and killing other things. The Knight really didn't do that much on a whole. I did send some Kopters after it, making him have to focus on them for a round or two, since the Rokkits could threaten his armor.
Tankbustas are probably your best bet if you want to take it out. They won't be able to make it explode, but they get extra chances to ensure a glance on it with Tank Hunter. Killsaws can do a decent job, but then you run into the issue of Strength D chainsword killing your stuff, or getting stomped.
Kustom Mega Kannons could be a great option for cheap points if you happen to have the models. 36'' S 8 AP 2 blasts to help wail on it, shooting at BS 3 due to gretchen is really helpful. You have a chance t make it explode since they are AP 2, and if you're REALLY lucky, you can get it to blow up right on his own back field and hit his own stuff with that Strength D explosion.
As for Orky fun, but still effective: Mek Gunz in general are great, orky, and killy. Warbikers are quick, killy, and can be spammed quite easily. Deffkopters are wonderful S8 spam, durable, and can outflank. Mega Nobz are as killy as an infantry unit can hope to be, and will draw a LOT of attention, meaning if they get shot at, other stuff lives. If they ARENT shot at, then they get in and kill things. Period. (But be sure to toss them in a Trukk so they can flat out turn 1 and cover some serious ground, and keep them behind blocking terrain if possible)
