How exactly do you do a headswap on a metal miniature?

Oh boy...
Get ready to take out the power tools
It depends on the model.
But generally you grind/cut/drill the head off and glue/pin the other one on.
then green stuff blend it back together usually.

Easy, get a Jeweler's Saw and cut the old head off. Drill holes in body and head with pin vice and pin the head in place. You may need to do some gap filling with greenstuff.
A Jeweler's Saw and a Pin Vice are must have tools for the hobby. If you don't have them you should get them anyway.

I prefer to use clippers rather than power tools. You get better control, I find.

A mate in my club had a GK brother captain Stern (metal) model that someone had attempted to remove the head on using only clippers - and ended up doing an incredibly dodgy job of it.
I'm seen as the "fix it" guy due to my age advantage (and having the tools) - being at least 15 years older than the next oldest. He asked if it was possible to put 'bald shouty marine head' onto the model to replace the butchered monstrosity.
3 drill bits, a milling bit and 30 minutes later, I had the head/psychic hood area clear of metal and shaped to fit the plastic head - complete with a socket for the neck nub to go into.
That's an extreme case, though. Normally, it's hack the old one off, pin the new one on and GS any gaps.

I don't clip it off all in 1 go - I just clip off a bit at a time. I then use a file & knife to clean up the neck.
