Rules are 3 Knights are required minimum for a primary attachment

FW rules state that due to rarity of the Cerastus style knights, there may not be more than one type of Cerastus X Knight than other Knights in the detachment

Would a Detachment of a Cerastus Knight Castigator, a Cerastus Knight Acheron, and a Knight Errant be legal on 40k?

As there is one of each, there is not 'more' of one type a Knight than another.

You are correct. You could even take a Lancer, a Castigator, and an Acheron as a legal 40k IK formation, with one as your Warlord and an automatic upgrade to Seneschal stats.
