I have: 3 guardsmen squads
2 command squads
1 heavy weapons squad
2 special wepons teams 1 with 2 snipers and a demolition and 1 with 3 demolitions
2 leman russes
1 chimera
1 commisar
what should I get next?

If you want a deploy a fast attack then Vendetta Gunship is by far the highest power per points cost in that section (and honestly its the best thing in the whole codex) just be warned. A nerf is coming, its that good.
It looks like you are going for 1000 ish points. If so you need more guardsmen for sure. Why one chimera? Yes they are easier to deal with now but they are probably the second best deal in the codex.
Are you planning on doing a combined squad with more than 10 guards men? If not you should if you are actually planning on using that commissar effectively.
If you feel like you need plasma but are short on points, the armored sentinel is the cheapest way to field the plasma cannon but that's a situational take at best.

More guardsmen and chimera would be my suggestion, when your ready for big guns invest in wyvern or manticore

What he said. Wyverns and Vendettas are the bomb. If you're going blob guard, get priests and/or divination psykers.
Also, a Punisher is always helpful, especially with the div psykers.

Wyverns for sure. Get two. I got around 3k points of guard and just recently got two wyverns. Really regret I didnt get them earlier. Got two vendettas too that I never field, I wouldnt bother getting them unless you really need them in your meta.

Wyvern, Pask for 2 LRs with gatling/plasma, and lot more bodies. To have fun with IG you need 50-100 bodies. You'll also need special and heavy weapons, something that can go for Carapace armor veterans, priests, psykers. You can convert priests from fantasy zealots or whatever they are called.
Also try to get it cheap because boxed IG infantry costs insane if you want to go big.
