I've been wanting to do some conversion work but don't want these guys to flop hard. Any experience/tactics with them? Every Eldar unit has a role what's theirs?

Every Eldar unit doesn't have a role. Look at a lot of the Phoenix Lords, or the Wraithplane thing. The biggest glaring issue with Storm Guardians is delivery. You can't assault out of a Wave Serpent, our only Dedicated Transport. Dark Eldar allies make a solution for that. The second glaring issue is a S3 T3 model trying to punch things. So you're wounding nearly every model in the game at a 5+ AT BEST.
So a weak unit that can't do its ONE job well and has no way to get to its job in an edition that punishes Assault in the first place. Storm Guardians have no place anywhere. I honestly wouldn't even waste the shelf space...

Storm Guardians seem to fall down as a pure assault unit. As mentioned, they don't have access to an assault vehicle (unless you bring in Dark Eldar). The only perk to storm guardians is the expensive special weapons, fusion or flamers. It is one of the few ways eldar can bring flamers.

I killed a riptide with Storm guardians once, two melta shots and a few rounds of combat.
People usually don't bother to deal with them if they're just lurking about in cover somewhere. I use them as a counter-attack unit.

If you want melee units, there are aspects for that.
If you're going for a melee-only force, guardians as troops are the way to go. Drop a warlock in there for a bit more power.
But, 7th isn't the right time to do that. No offence TWilkins, but a single anecdote isn't enough to make storm guardians useful.
