Welcome ! I am a fellow Eternity King player, and let me tell you the choices can be intimidating.
You have core similar to what i use ; i like running sea guard and darkshards too as my core.
I am going to make a recommendation before you do ANYTHING else.
Get a battle standard bearer. All armies need it, Elves REALLY need it.
Get 2 bolt-throwers (i tend to take high elf ones, as i don't dip into rare very much). You won't use them both every game but having access to 2 is nice.
Get a unit of Doomfire Warlocks and SIsters of the thorn. Why ?
Doomfire Warlocks are phenomenal. End times magic gives me full bore access to dark magic and death magic. Great nukers here, and power of darkness on tap is nice. In addition they are survivable (4 up ward vs. almost everything in the game - except mark of slaanesh stuff), and they have a good number of medium strength attacks in case push comes to shove (you dont really want them in melee, but they can hold their own against small threats).
Ditto on sisters. Full bore access to beasts and Life. Egads. For sub 275 points, you just picked up every spell in 4 of the single most useful lores in the game.
Regarding Glade Guard ; you do have a lot of core, but Glade Guard can be a lot of fun / tricked out with their special arrows. Might be worth it, even for just a unit of 20.
Cold One Knights: Great shock troops. If you like 'em , go for it. Though one note: dragon princes can be disgusting built properly. Remember, the Leader model can have 50 points of magic items (i think weapons and armor only, but who cares). He's basically one step down from a prince, but for half the initial investment for that single model. NOt saying you should get them, but they can be really really good if you do them right.

Past that, how do you like to play ?
For special choices, you should give the high elves the longest, hardest look. Lions hit like a ton of bricks at
STR 6. Sword Masters have 2 attacks at
STR 5. Phoenix Guard are a bunker and a half and can still lay down hurt on infantry and heavy infantry. You literally cannot go wrong here.
I personally usually take 15 Phoenix Guard, and then 21 sword masters, but that's me.

What about different Core ?
Do you like witch elves ? lots of poisoned attacks, but not very stalwart right ? Welp. STick them with a cauldron and they get a 5 up ward, and potentially an additional attack. The Death hag and hags of the cauldron also have tons of attacks, and on top of those great wards, it passes out magic resistance. The hag can also be your
BSB if you want. Just beware stuff like cracks call, etc.
I like running 25-26 witches with a cauldron with
BSB death hag, OR sometimes instead i'll put my 21 sword masters with the cauldron.
In either case i stick a high mage in there with high magic, and start powering up that ward save.

If you use witches just be careful as they do have to test to avoid hitting the mage. It's a gamble, but can be very, very worth it.

How about eagles ? Wonderful for engineering flank charges and superb at murdering enemy war machines. I suggest 1-2.
Wild Riders of Kurounous can be fantastic too. Built well they hit like a dump truck, and your SIsters mentioned above can make them absolutely godly.
What about Phoenix's ? Fire phoenixs are fun against infantry heavy, and frosties are a nice beatstick that passes out -1
STR and always strikes last. Even better ? WInds of magic makes you roll 4 dice, so a way better chance to get something positive rather than negative on their table of effects.
Ellyrion reavers are fantasic too, i can't recommend them enough.
Also i LOVE sticking an assassin in my armies now. It's just too useful to have a potion of strength toting mofo pop out of no where and ruin my opponents plans.
If you want to use the high magic ward trick, a couple baby level 1 or 2 elf mages are the way to go ; as failing to cast means now that you can only just not cast that spell with that caster now, it's worth trying to 1 dice cast hand of glory / apothesosis, especially if you have a unit of brolocks that can power of darkness the investment back.
If you play larger games (2500+) and have a playgroup that doesn't get easily butthurt at powerful models, get Alarielle the Radiant's model (which is what you use for Alarielle Incarnate of Life, who is
bs good). She's probably the most annoying, undercosted, under-rated end times character released yet, and at nearly half the cost of the big boys, she's a friggin' steal for all she does. With Sisters casting life and beast spells, you can quickly get a tough as nails elven army going very very quickly between flesh to stone, Wyssans wildform, and Pelt. That's 3 targets of +2/4 , +1 and +3 toughness. Oh and they're all possibly getting 4 up regen and 6 up ward from Alarielle too.... oh and alarielle herself is a Life loremaster at +5 to cast. GROSS.
My friendgroup refers to her as the "friendmaker".
The great thing about Eternity King hosts are the options ! I tend to play about 60% high, 30% dark, and 10% wood as a split, but you can do almost anything you want.
Really the beautiful thing is that Eternity King allows you to cutstomize how you like to play across the three books, while making every last melee elf an enemy mulching machine.
