Rules say that "When a unit with any models with a Jink special rule is selected as a target for a shooting attack, you may declare that it will Jink". Thus , you can put IC on a bike into your Green Tide and Jink with 100+ bodies .

Yes, the unit can declare it will jink, but keep reading the rule:

If the unit Jinks, all models in the unit with this special rule gain a 4+ cover save until the start of their next Movement phase...

This already came up with the Skytyrant formation for Tyranids (it's a winged Hive Tyrant surrounded by 60-odd Gargoyles).

Drunkendonkey is correct - you can declare you're jinking, but only the models with the jink rule actually gain the cover save.

It's also unclear RAW-wise if you're allowed to run when you have a biker model that's joined a unit of footsloggas.
