Hello everyone,
I was hoping I could get some advice from you guys for avoiding units that are to good or simply not enjoyable to play against in the Imperial Guard army. If it matters at all I am not likely going to use many, if any, infantry units, have no qualms with going unbound, and all I care about is making the game enjoyable for my opponent since I dislike 40k which has only been exasperated by my favorite army being ruined (in my opinion). Any advice would be much appreciated thank you

Guard are generally considered one of the weaker codexes in terms of power levels, so most units should be acceptable to most opponents. Arguably the best value unit in the book is the wyvern, which I could see some opponents being frustrated by if spammed. An entire wall of AV14 tanks might be a little boring for an opponent who hasn't brought quite enough armour-penetrating gear too I guess, and might make for a less enjoyable game.

In general, there's nothing like that in the IG codex. The closest would probably be the Paskisher (Pask in a Punisher, an AV =14 Warlord that has insane damage profile against any target), but even that isn't going to annoy people that much after a few games.
Honestly, Summonspam, Serpent Spam, Titans and Triptides are all you really need to avoid, the rest of the game is fine.

My problem with the wyvern is not so much the damage it does, but the mechanics of doing it. 4 shot twin-linked barrage blasts just take too much time to resolve.

Only two things in the codex truly hamper fun -
Paskisher (just disgusting)
Wyvern (clunky and disgusting versus hordes)
Be careful with flyers as well though, it's easy to spam them with our codex and that's not such a fun thing to do.
If you want a vehicle army go ahead, throw in loads of hellhounds, devil dogs, sentinels. Mix it up. As long as you have variety, you will have fun.

spamming wyverns might create some issues - outside of that you are fine with gard. As many others have stated.

If you don't enjoy the game, you should talk to your boss about it. I don't work in a gaming store, but in my limited experience a game of 40K isn't fun if my opponent isn't enjoying himself... With that in mind, no matter what kind of army you bring, if you're really not having fun I won't enjoy the battle either.
Either that or find something you like about the game. I'm really into close combat myself, so I make armies that excel in the assault phase. Even if I lose, I have a ton of fun as long as my orks get to fight some dudes!
Looking through the AM/ IG codex I don't think there's anything there that is too powerful. Paskisher can be taken out by a wide variety of things, so I think it's fine. Wyverns... Never faced them before. They would probably sting, since I play a footsloggin' horde but very few people play horde lists these days. In the end it depends on your local scene. If people bring a ton of conscripts, gaunts and ork boys or even footsloggin' marines maybe stay away from multiple wyverns so they don't start crying as you remove whole blobs. Most people run mech though and wyverns can't even do much against vehicles.

Yeah wyverns are pretty much the 'ugly' unit in our codex; re-roll to hit, to wound AND ignore cover base value? I'll take 5 please.
Giant blobs backed with Commissars/Priests is also quite ugly, but manageable.

Hilariously I tried that, when I found that I despised the newcrons, and is how I ended up with a guard army. Also apparently I am a very good actor since the main person I play is my boss, who insists on a game almost every day I work.
