On page 24 and 25 of the Space Marine codex it gives a complete break down of the second company of the Ultramarines, and in the Imperial Armor books it gives detailed break downs of other armies.
Is there a similar source for White Scars? I kinda feel like laying off my inner Spike and making a fluffy White Scars company.

The White Scars are fairly under represented, there isn't much at all about them. I doubt there's anything in depth about their company breakdown. However, they're codex compliant I believe so it would follow the general pattern for most chapters, except they use a lot of tactical squads in rhinos and bikes.

Not much on Lexicanum, somewhat more on the 40K Wiki (under Chapter Organisation). I'd guess this is as good as it gets.

Damocles has the force that Kor'sarro Khan took with him representing 3rd Company. It's represented as outright units and Apocalypse Formations so some of the numbers are variable but this is everything listed from White Scars:

A Battle Company, 1 Vanguard Veteran Squad, 1 Scout Squad, 1 Librarian, 2 Speeders, the Khan (obviously), and the Formation 'Hunting Force' which has a Captain, 0-1 Command Squads, 0-1 Chaplain, 3-6 Bike Squads, 1-3 each of Attack Bike squads and Scout Bike squads.

Now, the picture has them all with Fast Attack shoulders so if they're part of the 3rd Battle Company, who knows. I'm no White Scar expert or fan. Also seeing a lot of white trim instead of the normal red. Maybe it's a Reserve Company making up these spare bikes. Looking at the big picture of all the models on the table I'm seeing a demi-company, not a full Battle Company but a Dreadnaught is there and a Stormraven, so there's still some flexibility.

Not sure if there's another better representation of a fluffy White Scar force but that's what I got.

Well that sounds like something I would take anyways, but I would put that Stormraven in a formation with two Stormtalons because that formation kicks ass.

You'll find nothing like the detailed force breakdowns that the Ultramarines get, so you just have to make it up as you go.

The 30k source material will give you a good idea of what sort of tactics and equipment they prefer, but keep in mind that they are a Codex Astartes compliant chapter, and so will tend to use more combined-arms tactics than they would in 30k. They certainly have a preference for using lots of bikes, speeders and flyers, but they also field devastators, predators and terminators just like any other chapter. Dreadnoughts are the only thing that should be very rare (or nonexistent, as White Scars consider interment to be a living hell, not something that you would condemn a fallen hero to unless there was dire need).

I am mostly looking at what special weapons they would bring. Grav spam is the current meta, but it seems like it might not be what the fluff says they would bring. Also buying enough grav guns is really expensive.

Also are there any successor chapters of any chapter that use bikes as heavily as White Scars? I've looked into WS successors and they don't say anything about specializing in bikes. I'm aware of the Ravenwing, but IMO Codex Space Marines bike squads are much better.

There's nothing, to my knowledge (and I've been kicking around 40K a while) that would limit your equipment choices for fluff reasons.

If you wish to embody the Scars on the table, just follow a philosophy of speed an mobility.

To that end, everything that isn't on a bike has a transport, be it Rhino, Razorback or Pod, and supplement with plenty of bikes and Speeders.

If you're interested in getting a feel of the character of the chapter (or Legion, more accurately) then the HH book Scars will be quite instructive, but essentially, while they have their beliefs, they're quite pragmatic and I don't see any reason why they wouldn't choose the best weapons to accomplish their mission.
