If a unit fires at another unit and not all of its models are in the fire range, what happens? The whole unit shoota with all models or just with which are in range?

Reread that section in the rule book. Wounds go till the pool is exhausted.
Check 'Out of Range' in the 'Allocate Wounds & Remove Casualties' section of the rulebook. A model may not have Wounds allocated to it if none of the firing models are within range of it.
