I know Corran is better for Fat / 58 Dash but if, for fluff reasons, I wanted to add a couple of small jousting ships to escort Dash; what should I add?
Z-95, A-Wing? Or Y-Wing even?

Z-95s have the best jousting value for rebels, so that's the obvious choice. Corran is still the clear winner though, and I'm not sure a jousting escort is even viable at all.

Yeah, I didn't intend to mean 'escort' as in 'fly along-side', but rather just in the sense of 'what to include with Dash'.
I guess if I'm looking for little ships then the cheapest ones makes sense.

I know, and Corran is still the clear choice. The problem is that you have 42 points (assuming no initiative bid) to cover Dash's primary weakness: maneuverable ships that can get inside the donut hole. So you need a ship or ships with enough firepower to deal with anything that tries to get too close, enough maneuverability to keep up with Dash, and enough endgame potential to win if Dash dies. And, ideally, you want a second major threat that can force your opponent to choose between bad options if you split your two ships. Corran does that, z-95s/rookie pilots/etc don't. Your proposed "jousting ships" struggle to cover the donut hole under ideal circumstances, and have little hope of winning endgame situations against Corran/Whisper/etc. And they don't have the same "no-win scenario" effect on your opponent, you've reduced your list to "Dash and 42 points of stuff that doesn't really matter".

Not really. It's not the cost that makes the z-95s the best at jousting, it's the cost relative to their stat line. More expensive ships could in theory out-joust the z-95s, it's just a coincidence that the cheapest ship is the best in that role. And cheap is actually bad in the "escort Dash" role for the reasons stated above, the z-95 is just the least-bad option under the requirements you've decided on.

Maybe I should have explained further.
Yes, I'm aware of the Corran is the tournament winning meta and I'm aware of Dash's doughnut hole.
This is more of a fluff / scenario game and we've decided on 1 large ship and 3 small ships for each side. No exceptions. That's NOT 1 large ship and 1 ace dogfighter.
That said, taking Dash still allows me to take:
1 Y-Wing, and 2 Z-95s or 3 Z-95s with min upgrades, or 2 A-Wings and 1 Z-95s, etc.
It is just between that, that I would need to choose from.

You should have. If you're going to have weird house rules like a minimum number of ships then you need to explain that up front. Otherwise "take two rookie pilots" would be an expected reply, especially since you said "a couple of ships", not "exactly three ships".
That's NOT 1 large ship and 1 ace dogfighter.
Then you're screwed. Dash doesn't win with those requirements, and you're screwed if your opponent brings Whisper/Fel/etc (which they can easily do).
That said, taking Dash still allows me to take:
1 Y-Wing, and 2 Z-95s or 3 Z-95s with min upgrades, or 2 A-Wings and 1 Z-95s, etc.
And the only relevant choice here is two a-wings and a z-95. Naked y-wings suck, and you don't have enough points to buy any useful upgrades for basic z-95s.
