I recently decided to include a Mek in my starter WH40k army (that is, my first ever WH40k army, totally new to the game and the hobby in general), and was wondering where/how to get the parts for it.
I know (I think?) Lootas from the Lootas box can be made into Meks with parts that come in that box, but IIRC they only have the Kustom Mega Blasta. There's also a separate kit for a Mek, which has a Kustom Mega Slugga.
I understand I can kit-bash to create, say, a Kombi-Rokkit... but I wanna avoid kit-bashing until I've got a bit more experience. Are those bits available anywhere, or is the only way to get 'em kit-bashing?
In other words, are those two (Lootas box, single Mek model) the only "official" options to make Meks, and if so, is there no "official" way to equip them with anything other than KMB and KMS?

Yes, to the best of my knowledge those are the only two ways to get an "official" Mek model. If you have a box of Lootas already, you're set. Don't buy the single Mek, he's cool looking, but a waste of money. Since you are just starting out, take a regular Boy model and convert him. Or proxy a boy as a Mek to get the feel for how he fits in your army.
Meks can take other weapons besides the KMB and KMS. The Killsaw is a popular option. Not many models can take that. They can also take a Rokkit launcha, which is great. Orks often struggle to squeeze in enough S8+ attacks.
Another way to go is just to take him bare bones and use him to eat challenges. Think of him as a shield. By sacrificing 15 points, your Nob or Warboss is free to swing that PK at some regular troops.

Oh I know the can be equipped (rules-wise) with other weapons. I meant model-wise. Since the only two ways to "officially" get a Mek model only give you the KMB and KMS options, you can't "officially" build the model any other way.
I was leaning towards a Kombi-Rokkit or Kombi-Scorcha, actually, and wondering how to get that w/o converting/kit-bashing/modding/whatever. I do have a box of Lootas, so I shouldn't have a problem building the base model, just with the weapon.
I'm sure I can scrounge around and find a suitable replacement (I also have a set of Meganobz which will be build with PKs and Twin-Link Shootas, and I think the kit brings Kombi-weapons, which I can probably use), but I was wondering.

Kit-bashing Orks requires about zero talent for conversions, as pretty much any weapon option you could want for a model exists in one of the various kits, and they're all compatible with similar sized kits. The Nob kit comes with two Kombi-Rokkits and a Kombi-Scorcha. It's as simple as using the arms from the Nob box instead of the ones the Mek comes with. Or even just using a Nob instead of the Mek if you haven't already bought it, as there are two Mek appropriate heads in the Nob box as well.

I agree. If your modelling skills aren't great, the Nobs kit is an easy way to make a Mek - and several other character models (which you're likely to need elsewhere in your army) from the other bits. With a little conversion, you can even bulk up a Nob to make a Warboss.
Weapons aside, a Mek is just an ork overly obsessed with technology, so likely to be carrying lots of tools instead of spare ammo etc.
