I've played a good number of games with my friends, and we tend to do just the normal game types. For some variation, I'd like to try some that arent in the books, but the only idea I really have at the moment is an escort mission. currently I'm trying to think of ideas for
a game mode that involves necrons or imperial guard, since that is what me and my friend play. Any ideas?

A really fun custom game mode me and my friends often play is 40k Zombies. It essential works like call of duty zombies where the player controls a single and gains points for killing zombies, they can then use the points to buy weapons and upgrades for the character at the box.

Find the Altar of War book. Not every mission is a gem but some of them, and the army choice really doesn't make a difference for 95% of them, are friggin amazing missions. The Tyranid one in particular about dropping a bomb inside a sphincter passage inside a Hive Ship is amazing fun. And very restrictive. Other than how they worded the fluff, it's a very good mission. And that's just one example from dozens.
I also really like the 'Last Stand' types. I think Black Legion has one. Where the Defenders deploy in the center and have the Stubborn rule while the Attackers respawn each killed unit. I think it's a plain Kill Point mission, but with each respawned unit worth two points instead of one. Imperial Fists may have another version more hinged on a Warlord (Lysander in the Fists' case) being alive and not in combat at Turn 6 to win, in combat is a draw and if he's dead then it's a Kill Point tally.

I believe Battle Missions has Necron and IG specific missions, should be easy to get hold of 2nd hand. While the book itself is for an older edition, I really see no reason why the missions themselves wouldn't work with 7th.

A little more involved custom game type I've been playing lately is a mix of tabletop and RPG. We each started with a single HQ model worth X amount of points, and are allowed to purchase wargear between missions. In addition to wargear the rules allow for units or vehicles to be bought, ignoring minimum squad counts and all that. Points are per cost in the book, and you earn points by killing units/completing objectives/surviving etc.
It's a pretty 'patch the rules as we go' sort of game, but can be really engaging and makes for quicker round.
I'm currently down to only my chaos lord on juggernaut (sold my bolt pistol for a second axe, who needs range?!) though lost all of my terminator retinue in a foolhardy charge.
