Well, fifty Night Goblins into my army of 120+, I've fallen in love with a new paint scheme and aesthetic. My current one (you can see it here: http://www.dakkadakka.com/dakkaforum/posts/list/631619.page) is far too basic and bright for my tastes now. Should I strip them and start over, or should I just suck it up and finish them all?

Maybe finish whatever unfinished units you have with the current paint scheme and then anything further use the new paint scheme. Then maybe as time and money permit, replace the current paint scheme models with equivalents done in the new scheme.

My recommendation, and I've done this myself.

Paint the rest in the new scheme and only after everything is done, go back and repaint the old ones. Its still a painted model and counts as such. When you repaint them, don't do them all in one fell swoop either (unless you batch paint in groups of 50...)
do them in 5s or 10s so no matter what your models are painted, should you lose interest or what not!
