Apologize if this one has already been covered. According to the new codex Shadowseers can take powers from Daemonology (santic), but on page 28 of the rulebook it says that any psykers not from Codex: Grey Knights will perils on the role of any double when using this discipline. Does this apply to Shadowseers? I think RAW yes, but then this also raises the question of whether Shadowseers can use the Daemonology (Malefic) discipline, since on the same page it says any psyker can use this discipline unless otherwise stated. Thoughts?

Pretty sure you answered your own questions. The BRB says you can, the codex entry says you can, and without being a GK unit, you will peril on any doubles (not just double 6's).
