Canon-wise, I can only recall one single official image that answers this question:

I checked the image in my Codex: Tau (because that one is atrocious, but I can't find a decent one in the interwebs) , and the blade of the vostroyan on the right seems to be coated in a darkish-blue substance.

Appears black - blue - purpleish which could just be mixing from the background.

In their first codex, it mentioned blue blood.
Because it doesn't rely on Hemoglobin (what gives our blood its red colouring) to do the oxygen transport thing, but another metallic compound - could have been cobalt.

This is not outside possibility. Several terrestrial cephalopods species have copper based blood, for example.

It used to be blue/cyan. Fire Warrior went into great detail about blood misting and the differences between human and tau carcasses. If that changed since then, who knows.
