Can a psyker generate psychic powers while in an ongoing assault sub-phase? Anything but Force seems like a long shot to conjure up while you´re fighting in close combat.

I can't say without the rulebook nearby, but I would believe any unit or model locked in combat/ongoing assualt would not be able to preforn any other action until they are away from that fight (just like with shooting)

Well, it won't be during the assault sub-phase, it'll be during the psychic phase of a model that is locked in combat. But yes, the psyker is fully capable of casting powers that aren't considered shooting attacks, he's perfectly fine trying to cast things like invisibility.
