So last night a pesky chaos champion slaps a melta bomb on my ironclad dread and explodes it. The resulting explosion kills some of the scouts that are also locked in the close combat. Do their deaths count for combat resolution? We played it as “yes”, as they died during the combat.

To decide who has won the combat, total up the number of unsaved Wounds inflicted by each side onto their opponents. This includes all Wounds caused during the Fight sub-phase, whether from normal Attacks, the Hammer of Wrath special rule, or other factors.

So although "inflicted by each side" could well mean you don't count them (and indeed, does the Dread count as having caused the wounds, or the Champion? I'd say the Champion), I'd count them under "other factors".

When you attack a vehicle the attacker rolls for armor pen, and the attacker rolls on the vehicle damage table. To me there is zero question as to which side caused the wounds when a vehicle is exploded by an attack. So yeah, 100% agreement that the chaos champion player caused the wounds that killed those scouts do to 'other factors'.
