my girlfriend bought me a "Daemon Prince" recently, because she wanted me to continue with my childhood hobby.
i've owned a chaos space marine defiler, necron lord and a few other necron models.
I've only painted the models, without the knowledge of any rules or anything.
this is when i was 15 years old, now i am 20.
trying to get back into 40k, starting with assembly of this daemon prince.
this got me wondering if the weapon choice of the models affect anything
because the box contained an axe, 2 different swords, 3 different heads, armored torso and unarmored torso,
pair of wings and pair of jetpack? vents? thing.
tldr; does the assembly / colour scheme of a model affect anything

Many people magnatise the weapons so they can change what it carries
People play different levels of "What you see is what you get" on models - most normal people would be fairly relaxed however - esp if you are getting into the hobby.
Its good to let opponents know what a model has weapons/equipment wise if its not completly obvious.....
Colour schemes make no difference to anything rules wise

Morden is pretty much correct. But on the Daemon Prince specifically the only upgrades that you can represent with the kit are the armor and wings (since it doesn't actually get real weapon options) but you will pretty much always take the armor and wings (extra durability and extra mobility are always good). So if you are worried about WYSIWYG then I suggest building it with the armor and wings.

In answer to a further part of your question: paintjob does not affect gameplay.
(With the rare possible exception of Space Marines. I've heard people claim they were turned away at tournaments for having their Marines painted as one chapter but use the Chapter Tactics of another.)

That's ridiculous. Especially with all the"custom" chapters out there who says they aren't just a successor chapter with a similar paint scheme to one of the known ones?

It has 7 HQs, 2 Troop types with Dedicated Transports, 5 Elite units, 5 Fast Attack units, 6 Heavy Support units, 2 Formations with unique units not in the rest of the codex, and 2 LOW choices.

I depends on who your playing with I guess, the more official/competitive, the more it matters.
That said, the only weapon a Prince has, is a close combat weapon, which that can be anything. All other weapons you give it will be artifacts, which don't really have any models to begin with.
Personally, my group is VERY lax with this kind of thing. Hell, we've used paper cutouts to test a unit before considering to buy it.
As for colour, yea, doesn't matter one bit.

The Daemon prince is a special case because the Daemons are in both Warhammer 40,000 and Warhammer Fantasy. So there's bits in there to make him a fantasy or sci-fi demon, since in 40k he would have been a Chaos Space Marine he comes with the remnants of his armor.
The things I know: the most popular weapon for CSM daemon princes is currently called the "Black Mace". Usually I see people using the axe for that. You DEFINITELY want the wings/jetpack on him because having him flying is generally much stronger than walking. Other than that I don't think the armor or other arms matter very much.
However as a general rule the assembly does make a difference. Chaos always has extra spikes/tentacles. Most of the different guns and weapons will have different rules.
