So apparently, now that he's a gargantuan creature, he can only be wounded by snipers and poisoned attacks on to wound rolls of 6.
So 6 wounds. 3+ armor save. Possible 5+ invuln. And 5+ feel no pain. You can't get close to him, or else, you'll either get shot or close combatted to death.
And I can't effectively use snipers and sternguard to kill the thing.
Great! Who's great idea was that?

It's an open question. Previously, heavy weapons, snipers and poison were pretty much the way to go. Now he's not that much more expensive, and now he's pretty much immune to 2 out of 3 of those three things. It's like the game developers specifically adjusted the wraithknight so that you have to buy an Imperial Knight to kill the thing.
Why would they do that?

Heavy weapons are still the best way to kill it. Snipers and poison were ineffective before, they're just moreso now.
And a Imperial Knight is actually pretty bad at killing it, because it can't catch it and the Wraithknight hits first in melee. So all the Wraithknight has to do is soften the Imperial Knight up till it has only 3-4 hull points left, and then assault it and scrap it before it swings.

It's not an open question when the only two things you've asked so far is "Who's idea was that?" And "Why would they do that?" That's just complaining. Just like every other complaint thread that has been made already.

I was able to kill wraithknights before by drowning it in sternguard hellfire rounds. 2 squads of 10 (or 4 combat squads of 5). Potentially 40 dice, any one of which could hit on a 3 and wound on a 2.
Also, snipers weren't necessarily that ineffective before. 36 range. Hitting on 4s. Wounding on 4s. Rending on 6s. I mean, one scout of snipers wasn't cutting it on its own, but it certainly could contribute to taking a wraithknight down. Now? Pretty much useless.
So...interesting. Even an imperial knight can't really touch the thing now?

Gravguns already exist and are in plentiful use.
TH/ SS were out for a bit, but will now come back, beating WK, assuming it is more than a 5 termies unit.
TWC will take on the WK. Points are imbalanced on favor the the elf twins, but one charge with TWC:
WK swings first, getting 2 hits, plus Stomp. Averages four hits total (d3 thus 2 stomps) yielding ~2 dead TWC. The other 3 or so TWC swing ... 9 times? 4.5 hits. 4 wounds. WK will FNP and Invuln prolly 3 by odds, only 2 next round of hth. Hmm, but there will be one or two less dogs. Damn. Well, it will have to be a big unit of TWC.
Crisis Teams : With buffing toys, my 4 XV8 PR/ FB crew wracked up 6 HUll Points on a ImpKnight. Broadsides finished the job.
They are tough nuts to crack, but not impossible.

There is already a thread discussing how to counter the wraithknight, by army.
I'm not sure what the purpose of this thread is besides just complaining, which has already been done plenty. But the thread above has useful discussion in it.

You're about 3 weeks late to the party. We knew he was going to be a GMC when the codex was leaked. We've been discussing it in multiple threads on 3 different sub forums. How many threads do we need about this?

Bra guns suck at taking out the new Wraithknight, not nearly the volume of fire required. Only GravCents do it reliably.
TH/ SS?? Comical. Horrible unit, why would anyone let you charge their Wraithknight with TH/ SS Termies. That unit costs more than the WK and will die to the plethora of S6 and less shooting of the Eldar. Terribly ineffective counter. Takes less than 11 Scatter Shots to drop one.
TWC? Again assuming the Eldar player will let you, and not target the TWC correctly. Again, very expensive to counter a 295pt model.
Your Crisis example makes little sense, a lucky scenario for you does not make it an effective counter. And look at the cost involved....
There are very few effective counters outside of Grav Cents and another Wraithknight. GW increased the Durability of the Wraithknight by over 50%, increased its offensive potential, and only increased its cost 23% on a model that was already "too good" for its cost.
