I have 16 Crisis Suits and a Commander. They currently have the following loadouts.
5x Plasmasuits
3x Fusionsuits
1x Buffsuit (Buffyguard)
7x Missilesuits
I have bitz to change their loadouts. What is the best way to run Suits in Tau?

The best way is to magnetize them so you can switch whenever you want. Suits are extremely versatile and play very specific roles. Missiesuits and fusion suits are probably the most common.

Got them all secondhand. Weapons are already glued on, don't have any magnet skills.

Magnetizing is simple, definitely recommend it.
As to running them, you want units to have one goal, don't try and make a swiss army knife unit.
Melta suits are dropping in to obliterate armor, plasma are shooting up elite units, and missile suits are longer range meq and geq killer.
I was also always partial to running helios suits (plas/melta)

As an Enclave player I really like running 2 fusion suits as solo DSers. Drop and pop then you have a fast obsec unit for target saturation one the armor is gone.
Missile suits are great and i use them in conjunction with marker drones. I keep them in the back field and JSJ around popping light armor and marking targets. The JSJ keeps these guys around for a while and are super frustrating for opponents.
Plasma and the other as stated are nice specialized killers you can use depending on the threat. I really like plas/flamer suits as a Farsight bodyguard that drop in no scatter in order to obliterate a unit then jet out.
It can be surprisingly finesse-y spmetimes to keep them alive but the key though is not not overextend and pick the proper targets. Such a fun playstyle IMO.

Honestly, the best way to run them is either Fusion suicide suits, or Missilesuits. Anything else is done better by something else. I.e. torrent of fire/mass fire: firewarriors w/ ethereal/fireblade. They might not JSJ like crisis, but they put out more shots, cheaper.
AP2 has riptides w/ largeblasts and massive range, but if you don't have riptides, plas rifle suits are a decent option.

My current setup
Farsight
Buffguard
6x Plasma Suits (Target Lock)
16 Gun Drones.

I'd get some cheap greenstuff (go direct to supplies) and some cheap magnets and just practice. Honestly, its a really rewarding part of the hobby.
As for Suits direct;
Burst-suits: I've found range can definetely be an issue; especially when you run them with 6 gun drones - its relatively cheap for a strong 9-strong squad, mobile and horrendous amount of dakka... but range.
Fusiocide suits; Great, add a cheap 5pt flamer to your double fusions. You won't regret (even better with Tetras)
Missilecides: Don't over-rely on massed str 7 ap 4. Buffed or/and targeted properly, can be awesome.
Plasma suits (x3): Actually really good as either a drop squad; it will nuke the squad it shoots and can position to avoid return fire. Or to just play defensively and deter folk getting into double-tap range. A more reliable means than a riptide to deliver massed str 6 ap 2.. basically run them in addition to riptides.

I still use a trio of TL burst cannon/flamer suits. started them in an escalation campaign that started with kill team, and they ripped things apart. They're still useful at 2K, DS in behind the lines and take out them psykers/command squads.

My 2014 NOVA Farsight list, placed 5th, had this for Crisis
Commander with Dual Missile Pods, Target Lock, Velocity Tracker
BuffCommander
3xDual Missile Pods, Target Locks with 6xMarkerdrones
3xDual Burst Cannons with 4xGun Drones
2xDual Fusion
2xDual Fusion
1xTLMissile Pod
1xTLMissile Pod
Also had Triptide and a unit of Firewarriors to meet allied requirements.

Quite well. The dual burst Canon suits are definitely a staple in my lists. Deep strike them in and light something up, with two marker lights they deal tons of damage to a lot of different targets. They also synergize with the gun drones. There also my only real way of handling any GEQ units. If you Hunterallen, I did battle reports of all of my games using that list.
