If anyone's gone to the GW online website and tried to look for iconic models like Prince Yriel or in my case even just Resin Dark Eldar Grotesques they are listed as "temporarily unavailable" and it been like this for weeks now.

This wouldn't be suspicious if it was only one or two models but if you look across the entire Eldar set there are loads of older metal/resin models missing. Is GW taking them offline until the plastic versions become available? (Which is a large number of different models and surely it can't make sense to make all of them into plastics)

Does anyone know whats going on and when the Dark Eldar Grotesque model will be coming back? I need it to finish my army.

I've been waiting weeks for a Maugin Ra model, so I hear what you're saying. I don't think there's a grand conspiracy issue though, most likely supply problems. In the case of Eldar at least, I'm not surprised there is very high demand.

I was also in the market for a new (older) Warlock model that I didn't have. He was sold out, and unavailable for awhile, but then he became available for a short time before being sold out again.

I would imagine that anything in GW's catalog that's still metal or Finecast is spun in very small batches, almost on demand. I wouldn't also be at all suprised that they keep a very close eye on their existing stock to see what sells and what doesn't. As an example, the Sisters of Battle were pared-down to the minimum number of models necessary to maintain the line. Any models with duplicate purpose were removed, which Is why you see Sister with Meltagun 2, but no Sister with Meltagun 1.
