With the changes to the requirements as taking bikes as troops, are 3 man bike squads any good or is 5 the way to go? Also how would you equip them single special or double?

I see no reason not to take 2 specials. I would start with 3 man squads and if you have remaining points add more for ablative wounds.

If we fail to anticipate the unforeseen or expect the unexpected in a universe of infinite possibilities, we may find ourselves at the mercy of anyone or anything that cannot be programmed, categorized or easily referenced.

I run mine as 4man squad, but mostly because of what Xeno said: you put 2 special weapon in a 3man squad, then you see if you have extra points to add body in the squad.

Five is still the most efficient. Four requires Ld tests for every casualty, three means you have no ablative wounds, six is a decent sized commitment to the unit. Five gives you two ablative wounds and two have to die for the Ld test.

I am really liking 3 man units with 2 special weapons.

The ablative wound is the sarge. Also it doesn't matter if they take morale checks as they will regroup and have plenty of range to come back and beat up the offender. This also means I can get more of them or more support. Additionally the extreme MSU nature of this build means I don't care about most of the alpha strike heavy lists that are getting more and more popular as they tend to waste half their firepower finishing single grav guns rather than killing more units.

If you are going to make a bike heavy list then you might want to consider taking 5 in a unit or even a full unit to combat squad.

You should also consider attack bikes for the MM as their new price is very attractive for 2 wounds and a MM. I am kind of liking 2 meltagun bikers + sarge + attack bike w/ MM as a dedicated anti tank/ super heavy unit. It is actually surprisingly effective.

I'm going to try outflanking 2 3 man squads with 2 grav and a combi grav. It sounds effective but we'll just have to wait and see
