If I pick a unit, then buy their dedicated transport.

Then the unit receive infiltrate before deployment. Can I infiltrate them 'in' their dedicated transport? (by infiltrating the transport)

Yes, the dedicated transport is deployed during the infiltrate step of deployment and the squad with infiltrate must start in the transport.
