Ok so I have virtually completed my Salamanders, just need a few more things here and there and I want to begin a new army.
I cant pick between Tau, Necrons and Tyranids. I dont really care about competitiveness I just want an army that is fun and easy to paint/convert/play and one that I can have a good time with. Which of those do you think would be best?

If you don't care about winning then Tyranids would be the most fun to play, as you can either go Tyradactyl, Nidzilla or horde based army. Even Psyker Heavy too. They also allow you to go Psyker heavy too. There are opportunities to convert too, I've seen some great Lictors made out of Warriors and I myself have Biovores converted out of Hive Guard. They are relatively easy to paint too, just time consuming as you've got a lot of models.

Tau lends itself to two particular play styles, gunline or mobile Tau. Gunline usually has Broadsides and sits back and shoots you, Mobile Tau has more vehicles and Crisis Suits to move around the field. I've seen great paint schemes for Tau and also really bad schemes, so depending on your skills as a painter will determine how well your models come out. Not many opportunities to convert models, but you do have lots of different bitz in the boxes they come in to represent Wargear, so there is that.

Necrons are by far and away the easiest army to play out of the three. Since half the time your models survive (Decurion wise) it's a very forgiving army. Because of this, it's also recieved it's fair share of rage from many players, especially those who come across it for the first time. Being robotic in nature, they are the easiest army to paint, silver base coat and nuln oil wash usually gets Necrons done. There aren't many opportunities to convert as the Crypteks lost their Harbinger options. You can still convert, but your restricted to different types of models and scratch building FW models.

Hope this helps you out a bit. I'm surprised you didn't go Orks to be honest! They would have ticked the boxes perfectly.

Tau. For the greater good. My bet is out new codex will be completely broken like every new codex is.

Otherwise I like their philosophy, mechs, and clean aesthetics.

Necrons second choice. I intend to have a Necron army of my own one day (along with a DE).

Tyranids for conversion ease. Also you can really cheat with the paint and it still looks good. also the models are cool spiky bits aside.

Necrons for easy mode (both painting and playing)

Tyranids for hard mode of both. While it is possible to speed paint and do smaller units of big things, you'll eventually get in to blob units of stuff.

Tau for a happy medium between the two.

of the above, all are good choices, although 'nids have the most potential for variaty. bhey'd also be fun for both sides to play AGAINST your salamanders, which is worth considering if you have friends you might be able to talk into trying the game

that said, it mioght also be worth considering Ig or an admech army. if only so that you can use your salamanders as battle brothers while building it up

Thanks for all the suggestion guys, I have been doing some play testing at my local game club just to see which army I like more, still haven't made my decisions yet but I will. As for the Orks, they have never really appealed to me.

I'd like to give another vote to Tau.

I'm not a personal fan of their gameplay, but I can see the appeal. They are powerful, but not OP and you can easily play a casual list that still holds it's own.
And last but not least, they arguably look cool! A guy at my FLGS made a sort of Japan-themed Tau army, here's a good shot of his Firewarriors:

Really depends on the playstyle you like the sound of.

I love Tau for their gunlines, a tactic that is barely used in most other armies. They can also be mobile and the mecha element are awesome.

Necrons are cool too and have some awesome models, but in my eyes are boring and everyone plays the same IMHO.

Nids are always fun to play and to play against. Possibly the most terrifying swarm army to play against, BUT synapse is a big drawback. Nids also allow for a large degree of kitbashing and conversions

I will say that depends on your money and style of play. I personally played Necrons, and I will suggest not playing them as they are extremely boring and you can't convert them. The Tau are a good force, bu unfortunately they don't have much conversion value, but as far as I understand, they have plenty of customization. The tyranids are fun, as they can be painted almost in any way you want. They have poor shooting value, but god help you if they charge you. You can make your own Hive fleet or use one already there, and tweak little things for more fun and experimentation. They are also cheap point-wise, so you may like that. One more bonus to the Tyranids is that you spend a lot of time, and can have huge swarms, and that is awesome because, admit it, it is always fun to have a huge, impressive army.
