Hi everyone!
I've been out of the game for about a year, maybe a little more...
Could anyone take me through all the major changes and releases since after 7th was released? (not including the launch of 7th itself)

Note to the reader: my username is not arrogance. No, my name is taken from the most excellent of commanders: Lord Castellan Creed, of the Imperial Guar- I mean Astra Militarum - who has a special rule known only as "Tactical Genius"... Although nowhere near as awesome as before, it now allows some cool stuff for the Guar- Astra Militarum - player. FEAR ME AND MY TWO WARLORD TRAITS.

There is a new phase: the Psychic Phase. There's a lot to be said about it, but I think it's easiest to just skim through the main rule book and see for yourself what its about. You can now summon Daemons, which is pretty cool! When 7th first came, a lot of people were scared at this, but it's very difficult for non-daemon armies to do on a reliable basis (any doubles causes perils for non-daemon psykers), and you now get Warp Charges to throw spell. Your available Warp Charges are the combined number of mastery levels in your army + d6 (so an army with a single level 2 librarian will get 2+d6 warp charges). These then need to be activated on a 4+*, so to cast Summoning, a warp charge 3 spell, you need 3x4+ dice.

Everything scores now (except flying units), including vehicles. Some formations still give Troops Objective Secured, which means that they "super score" (if an Elite unit and a Troop unit are on the same objective, the Troop unit takes it**)

You now have Formations/Detachments. In 6th you had a standard FOC and an Allied Detachment, you now have the standard Combined Arms Detachment (1hq 2troops++), Allied Detachments and a whole ton of faction-unique detachments. Some armies can only use these unique detachments as they lack HQs or Troops! (Like Skitarii, Harlequins and Inquisition - though the latter here were around with their Inquisitorial Detachments in 6th).

Some of these Formations consit of several Detachments, like the Necron Decurions or the Khorne Daemonkin one, where you take a basic detachment and add auxiliary ones (what these formations/detachments consist of is listed in their codex). Some detachments are only available as Auxiliary choices (meaning you need the Core detachment to unlock them), but some can be taken as independent Detachments. If this is the case, they will be listed as a stand-alone detachment in the Codex. One example of this is the Gorepack formation from Khorne Daemonkin, which consists of 2+ units of bikers and 1-4 units of Khorne Flesh Hounds (I think that's the numbers at least). These gain some special rules (move through cover and pref.enemy:psykers), and can be taken as either a primary detachment or an allied one.

As an example, you can use a Chaos Daemons Combined Arms Detachment consisting of a Daemon Prince (HQ), 2 units of Pink Horrors (Troops), 3 Soul Grinders (Heavy Support) as a Primary Detachment. You can then add a Gorepack of 2 Biker units and 2 flesh hound units. You now have a Battle-Forged (as in, not Unbound) army. Army composition is something I see a lot of people struggle with understanding, but once you get over the initial shock of the mass of detachments/formations available, it's very simple to understand. You need a Primary Detachment, this can be any type of detachment/formation (unless it specifically states it can't be your Primary Detachment, like the BRB standard Allied Detachment). 10xVindicare Assassins is a legal, battle-forged army. Some tournaments and gaming groups etc. limit the amount of detachments you can take though, but this is just house ruling.

Unbound is a thing; it basically lets you take whatever you want without thinking about army composition. No tournaments use this due to the possibilities for exploitation, but it can be a fun way for new players to get into the game before they understand how to build an army. People have always been able to say "just bring what you got and we'll have fun!" though, but I suppose GW just felt that they needed to verify this for some reason.

*Some formations get special rules that makes it easier to harness warp charges, like the Space Marine Librarius Conclave.

**This only counts for detachments that grant ObSec as a special rules, like Troops from Combined Arms Detachments, Allied Detachments and the new SM/DA formations. Tyranid Skyblight get it too as well as DKoK Death Riders in a FW formation.

There have been a lot of new releases (new eldar, new space marines, some new armies like Skitarii, Harlequins, cult mechanicus, new Imperial Knights, new dark angels, Khorne Daemonkin, etc.), but it seems like GW is focusing on Age of Sigmar now and letting the 40k community catch up to all the new stuff that was pumped out during the past months.

Some minor changes to the basic rules, but not really a whole lot.

The main change is, as mentioned, the plethora of ways to construct armies now. You can see some crazy combos on the table, some really cheesy and some just wacky and hilarious. Personally I am a huge fan of it, as it never did make much sense that every race in the galaxy would adhere to the same method of organizing their armies.

I think that's the major changes. Welcome back to the game!

Oh, I figured you wanted the general outline since you said "changes and releases", but ok. I have too much spare time today anyways

Skitarii and Cult Mech are both solid armies, Skitarii in Flesh Tearers (BA) drop pods can be a really brutal alpha strike with their canticles boosting their BS. There is also a formation where you take Skitarii, Cult. Mech and a Knight, and get free upgrades and no Gets Hot! results. It placed second at the BAO this year, if I recall right.

The new Space Marine and Dark Angels formations are really powerful, with units getting free transports! With ObSec! This naturally leads to some very powerful MSU builds, and a lot of armies will struggle to grab objectives against such an army.

Daemonkin is a fun, fluffy and semi-viable addition to Chaos forces. Being able to join CSM characters to daemon units (no Daemonic Instability!) is really valuable. Just throwing msu units at your opponent and getting Blood Tithe points, which can then be used to summon new units or boosting your army, is both fun and thematically fitting to Khorne, as well as a pretty viable strategy against armies that can't handle the pressure. You also rack up blood tithe points fast against MSU builds (like overmentioned space marine formations).

Necrons are very, very durable and thus very strong. Wraith-spam, lychguard deathstars, silver tide, av13 spam and even flayed ones are pretty solid builds.

Eldar are currently the top dogs in most people's eyes (together with SM and I suppose DA), with D-weapons all over the place. Eldar Jetbikes are also ObSec and now every model in a unit can take a scatter laser. So they have a lot of punch, insane mobility, decent durability (3+ and jink) and obsec, and cost less than Possessed Chaos Marines..yeah. And Wraithknights are gargantuans with D-weapon access.

Harlequins are cool and can have some neat builds, but I feel like they were swept away by the Craftworld Eldar (which are so much stronger) and you don't see them often.

Imperial Knights got some new options.

My personal favorite release has been Renegades & Heretics from ForgeWorld: like IG, just better at doing horde+artillery.
