As the title says, do you believe that the pretty much standard GK NSF list (librarians, terminators, dreadknights) can benefit from the addition of an Imperial Knight?
Which variant would you choose (forgeworld excluded)?

Yes, a Knight or two are an excellent addition to a GK army, as they effectively super-DreadKnights. I routinely take an Errant at 1850 or higher games, and a GK CAD with two allied Knights recently won a big tournament in Australia. Imperial Knights add to the Grey Knight style.

What would the rest of that army look like, or rather, do you want more or less terminators, and more dreadknights?

Nemesis strike force. You want that alpha strike so your knights can make their way up field unhinged. Take max dreadknights(2) a libby for powers, and termy squads. Stay away from anything else.

NSF is the way to go. You don't need NDK with IK so you've got some points to invest in a Stormraven which can be quite useful.

I took a CAD with 3 Dreadknights and two Knights Errant to 14th overall at LVO, so I'd say you can do ok with them. You're terrible vs FMC's, and there are a couple other hard counters out there, too, but play it right and a lot of people can't deal with you.

The new Knights are a boon to the pairing, too, with the new Knight Warden, since its 12-shot rending gun is good vs light vehicles, infantry, and can actually hurt Flyers.

I wouldn't do a single Knight, though. There are a lot of things out there that can kill one Knight easily. Run into, say, Skitarii in Drop Pods, it's easy First Blood. With two Knights, you might lose one, but then you can kill their anti-Knight stuff and let your second one run free. I tried the CC Knight allied in on its own and it was worthless, every game I would have been better off with either double Knights or no Knights.

I would suggest a Crusader or any thermal cannon knight with an Icarus on its back since GK have no anti aircraft.

What's this about "need"?

Tell me more of this army....

I was originally interested in the idea after reading this article:

But I mean, do people enjoy playing against 3 knight lists like that?

I've found that serious players enjoy the challenge, while the most vocal complainers don't actually face them all that often, if at all.

3 NDK and a Knight paladin is a good core to build around at 1850.
It's incredibly strong.

From the looks of it, IK and GK are viable.

Less so, now. In the last few months (mainly with the release of the new SM stuff), at ton of new things have come out that just plain hard counter GKs. Skyhammer with grav cannons can practically table you in one round of shooting, demi-companies bring so many units you literally can't kill them all, etc. But you can probably still do reasonably well.

At LVO, I ran this:

Librarian
2x5 GKT, 1 psycannon, 1 hammer.
3 Dreadknights, Psycannon, Teleporter, Demonhammer
2 Knights Errant

I played (iirc):
Pure tyranids with 3 Flyrants and a bunch of infantry (Knights murdered everything on the ground, I grabbed objectives and managed to kill a couple flyrants)
IG Blobs with artillery (ran straight in his face, multi-charged the blob, once that died I walked through the rest of his army)
A nasty Firebase Cadre Tau with dual Knight Paladins (My psycannons and melta cannons hurt his Knights enough that I killed them pretty easily, my Dreadknights killed a bunch of his stuff but died, my terminators walked across the board and killed his last unit of Broadsides for the win).

My only loss was to Pajamapant's Daemon/Nids abomination (he's a cool guy, fun to play). 6 FMCs flew around the board with impunity, summoning Daemonettes to rend my Dreadknights to death at I6, and lots of shots over the course of the game to kill my IKs.

I can't remember what my other two games were. I think I had one easy game vs a fluff player, and I know I faced at least one other Imperial Knight.

Dark, were you running the NSF detachment? Is turn 1 Deepstrike worth giving up ObSec for the GKT's? In my experience, they don't hit hard enough to be worth dropping anywhere but my deployment zone usually, lol.

Why did Banishment not reduce the daemonettes to I1?
