So, in universe, all Y-Wings and X-Wings require an astromech droid in order to do their thing.
What would most fighters be equipped with?

There is no default.
Y-wings and X-wings typically had either R2 or R5-series astromech droids while the E-wing carried R7-series droids, which were designed specifically for use in the craft.

I went for R5 because, thematically the Astromechs repaired the ship during battle, so that would be my choice.

Any R-series droid was capable of making inflight repairs. The R5-series was a low cost alternative to the R2-series and sacrificed functionality to bring the price down.

Yes, but given the rules for the R5 and the R2, the former seems more appropriate, even if you want to assume that a given fighter "actually" has an R2 droid in it.

The R2 units were considered obsolete by the time of the Clone Wars, hence Kenobi using an R4. by the time of the Battle of Yavin, R5s would be pretty common.
I'd say to help keep it diverse, the Y-Wings should be equipt with R2s, and the X-Wings with R5s.
as a side note, the Rebellion kind of made do with whatever they had, stealing astromechs all the time.

As well as using agromechs where possible. I'm sure I read that they preferred to buy agromechs over astromechs as a group/person buying large quantities of agromechs was less likely to arouae suspicion than buying similar quantities of astromechs.

R2 for the most part. The only time I use R7 is on Tarn Misson. Such a fun 25 points, maybe 29 with shield upgrade. I have run this in a few escalation tournaments, and he takes alot of shots before he goes down, if he does. His low PS can be offset with Wedge/swarm tactics. Just fun for me.
