So, how do I avoid those chunks of paint around the highlights when I spray lighter colors? Like when I add white to a SW blue-grey, it looks like there are white dots between the two coats. A photo won't help because it's almost invisible, but still - my transitions aren't perfect and I'm angry.

Sounds like either / or ~ paint is too thick, or pressure is too low.
Maybe paint not mixed fully too.

You mean splatter or your transitions are too rough?

I find mixing 50 50 in between EVERY color removes it for the lather
