Has anyone had success with an IG army in 7th that's either all-infantry, or mostly infantry (as in maybe 1-2 tanks, total)?

I play in a pretty competitive meta, and with the all the melta, lance, haywire, guass and fast monsterous creatures running about, I find armor to be more of a liability than anything. I run 2-4 wyverns and that's it. Guard are not particularly competitive, but blobs with 3-4 heavy weapons hidden within receiving support from psykers, priests and senior orders can pack a mean punch while holding objectives well.

Could you possibly post an example list?

I find infantry lists work well if backed up with arty (thudd guns, mortars and wyverns) aswell as fortifications.
However recently I have been struggling a lot with all infantry lists, they just lack the punch to break a lot of the newer armies.
But they can work, my friend plays Skitarii and I find that I can out range him comfortably and even vs his convocation I can win most of our match ups.

Azrael giving a big blob 4++ and for the most part FNP with the right warlord trait coupled with a priest turns them into mini necrons.

I have had a lot of success with my infantry IG army backed by artillery. My tourney list is basically infantry, conscripts, 3 madusa carriage batteries, 3 rapier laser destroyers, 3 earthshaker carriage batteries and some inquisition and other things thrown in. Artillery (especially S10 ap2 large blast) will do wonderful things against the power lists out there.
Weaknesses are that they are not very mobile, so don't expect to do well in mailstorm type missions. It can be mitigated by using Valkyries and vendettas, but mobility is your weakness.

Unfortunately, I don't have any artillery at the moment (my only vehicles are 2 Leman Russ, 4 Sentinels and 5 Chimeras). Looks like I'll have to abandon this idea.
Thanks anyway.

Infantry list can be pretty fun to play. You just have to play like the fluff and understand that you will lose lots of guys each turn.
If your playing in a competitive meta most foot guard lists will struggle as I couldn't tell you the last time I saw a pure guard list anywhere near the top of a tourney lol.
But if playing for fun against an opponent that's doing the same then I believe you will have a great time. I usually always included a blob of 4 infantry squads, each with a lascannon and melta bombs on the sergeant. Then have one squad with a vox and then add a priest to the blob. Priest keeps them from falling back and allows the blob to be a huge tarpit in combat and it even hits hard when the priests war hyms go off. Melta bombs are for if walkers get in combat with you or super high toughness monstrous creatures. Lascannon a for long range anti tank and then the vox is so the blob can get the ignores cover and monster/tank hunter orders as well as frfsrf orders. I have only ever lost this whole blob in one game and I usually always use it.
Last game I played I ran 5 infantry squads each with a vox and a special weapon and had them run up the board with a 30 man conscript unit. I actually won the game which was surprising but it can work if played right.
As others have said mobility is your biggest weakness.
