I'd like to create two roughly equal forces for introducing people to the game, and playing with visitors. Here's what I currently own:

Imperial:
2 x Tie Fighters
1 x Firespray
1 x Lambda Shuttle.

Rebel:
1 x X-wing
1 x YT2400 (Outrider)
1 x Millennium Falcon

I was thinking I should probably get another starter set, so I'm not so heavy on big ships. I feel like the Firespray and the YT2400 are roughly even, and the X-wing and tie fighters are roughly even. The problem is the Lambda isn't really any sort of a match for the Falcon, so the Empire seem a bit handicapped. Also the Lambda is a bit difficult to use, and maybe not very fun for new players.

So what would be some good ships to add (particularly to the empire) that would help round things out and even up the two sides?

TIE Interceptors and Advanceds are currently in a good place, but if your group demands having all the correct cards then they can be a pain as the upgrades needed to get them right are all over the place.

Interceptors are perhaps not ideal for absolute beginners as a lot of their strength comes from arc dodging which takes a bit of practice to get right, but the Advanced is a little more forgiving.

“Good people are quick to help others in need, without hesitation or requiring proof the need is genuine. The wicked will believe they are fighting for good, but when others are in need they’ll be reluctant to help, withholding compassion until they see proof of that need. And yet Evil is quick to condemn, vilify and attack. For Evil, proof isn’t needed to bring harm, only hatred and a belief in the cause.”

I would also recommend B-Wings. They are one of the strongest ships that the Rebels have.

This Is Where the Fish Lives

You need more small ships.

Pretty much any of them are going to be good buys, especially if your intent is to introduce people to the game more than to win tournaments. Giving people variety is a good way to get people hooked on X-Wing and all of the icon ships from the movie really help with this. People want to see X-wings, Y-wings, A-wings, B-wings, TIE fighters, TIE Interceptors, and Vader's TIE Advanced on the table.

And some, I assume, are good people."

For intros its hard to beat Luke and some Reds vs Howlrunner and some Academies.
Classic star wars. New people recognize the iconic ships and get hooked.
Then intro them to Boba and Han.

Okay thanks for taking the time to help guys, so I ordered another core set to get some more smaller ships, and I got the Tie Advanced because I think that's quite cool and adds Darth Vader. I decided to go with a Y-wing before the B-wing, just because I think it's a bit more recognisable, and I agree it's probably better to go with the really iconic ships and characters.

I also finally decided to splurge and ordered a VT-94 Decimatior. Even though it's yet another large ship, and not especially iconic, I think it might make a better centre piece for the Empire than the Lambda or Firespray (as it looks like a miniature star destroyer), and since the Falcon and Outrider both have a 360 turret, it seemed a bit unfair the Empire not having any. So now I've got...

Rebels:
Two X-wings, a Y-wing, The Millennium Falcon and the YT2400.

Empire:
4 Tie Fighters, a Tie Advanced, the Decimator, Firespray and a Lambda Shuttle.

I think for 100 point games that's probably okay, and gives both sides some choice. And the Empire has enough points now to be able to ditch the Shuttle, or just use it as an objective marker. I'm not too bothered about official cards, I sleeve all my cards anyway, so it's easy to just proxy the hard-to-get ones for now.
