Do you guys think troops with multiple wounds are optimal or is it better to get as many boots on the ground as possible?

Well it's AOS, so just have the same number of models as your enemy but with multiple wounds? Multiple wounds win every time as long as you have the models.

Probably depends on a bunch of factors.

Honestly I think I'd prefer multi wound models in AoS - particularly ones that have a high resistance/immunity to battle shock tests.

As a horde player I may have to adapt to the times unfortunately

This is kind of a prime example of why it is hard to decide which is better. Looking at 10 of the bloodreavers versus the three paladins. 10 wounds versus 9 wounds. The paladins have a much better save, are not really susceptible to battleshock, and hit like a train with multiple attacks, dealing mortal wounds and multiple damage. In comparison the bloodreavers only have a single attack, no save and only a single wound, equating to a very squishy unit that will crumble to battleshock. Seems pretty cut and dry of who is better.

However when you are start looking at special rules, and synergies with other units. If they are in range of a totem they get 2 attacks a piece, throw in the battle standard bearer it goes up to three, and throw in the formation bonus these guys will get a staggering 4 attacks a piece! That is before charge bonuses or rerolls that can still be added. So those measly 10 infantry is dropping a tidal waves of attacks on a poor unsuspecting foe.

The forces of Sigmar operate largely as super elite infantry, whereas the blood craving forces of Khorne ironically operate on synergy. It s still up in the air at the moment of who is the "better" force. Hope this helps in making your decision. Either force will be a bunch of fun to paint and play.

In wound-based army building methods usually multi-wound units have advantage - take ogres for example. 4 wounds, 3 attacks on ironguts. Then four state troops with halberds. Kill 3 dudes, only one remains with 1 attack. Wound an ogre 3 times, he still hits with all 3 attacks.

Multi-wound models are better for battleshock tests (fewer models lost - lower chance for failed bravery test) and keeping the attacks going despite taking wounds, but they're worse at table control as you can't spread 3 ogres as wide as 12 greatswords and losing one model to, say, Giant's stuff in the bag rule is more devastating, than losing a single greatsword.

This really depends on what unit you are using and the unit's special rules. My wife had a squad of stormcast eternal liberators assault a squad of high elf phoenix guard... it did not end well for the liberators. She had a hard time whittling down the squad. Her squad was backed by a stormcast lord replicator, mine was backed by a high elf caradryan.

I also massacred the lord celestant on dracolith with a squad of high elf swordsmasters (very nasty... 3+/3+ and reroll 1s on the hit roll!).

So yea... it all depends on the unit's attack and damage characteristics as well as their special rules.

The sum of it is, your larger blobs will benefit more from buffs handed out to units, whereas the bigger single models work with a bit more autonomy. If you get +1 attack for each model in a unit, you want piles of models in said unit.
