Depends which monster?

Officially, bases mean jack in AoS so the accurate answer is 'whatever you want'.
However, if you're looking for a 'fair' base, then one that contains the main mass of the mini is what you're after.

As small as possible while still keeping the creature upright. That would maximize your ability to get it into combat. Also incidentally keeps anyone else from stacking their models on it and ruining whatever work you did on the scenic base. But like RoperPG said bases don't matter from a technical perspective.

I use whatever is going to look best with the model.

There are some advantages to a smaller base, but those are mainly going to be found with infantry. I'm putting skaven on 25mm, not on 32mm. Could leave them on 20mm square, but frankly I like the look of the round bases and extra room.

....and lo!.....The Age of Sigmar came to an end when Saint Veetock and his hamster legions smote the false Sigmar and destroyed the bubbleverse and lead the true believers back to the Old World.

I put my ghorgon on a 32mm on the back foot, and 25mm on the front. Helps it get into combat without having to move anything around, and whoever finds themselves in-between it's legs gets some sympathy.
