So, I just managed to buy some Imperial Guard models off a friend who dosent play anylonger, Combined with the few models I own myself I got a nice collection now I think. Is this collection a good starting point for imperial Guard?

Very nice collection. My suggestion is buy a box of guys and build your hwt as 2 more mortars with some standing legs. Then use the spare missile launcher parts to create extra teams. It gives a good look with varying heights and good posing. You can model a team running with the launcher. That gets everything built. The auto cannon ammo drums with some extra bits make good demo charges as well to form a nasty swt.
Next would be figure which way you might want to go with your army. Mech infantry, mass infantry or tanks and develop from there

The good thing about guard kits is that they come with a load of spare bits. A HANZERtank says, with some additional guardsmen, you can use the heavy weapons team sprue to make additional weapons teams.

I like running a mix of different things. Right now I am mostly playing 1250 point games and am using two veteran squads in Chimeras, one platoon on foot with an added heavy weapon team, a FW destroyer tank hunter, leman russ demolisher and three armoured sentinels. I like this list because I have tanks, mobilized infantry, an infantry wall and of course sentinels.

If I had that piule of models, I would start with:
HQ: CCS: Commander, Voxcaster, 2 Plasma, Chimera
HQ: Commissar (for the platoon or Vets)
Troops: Veterans (Demo): Sergeant, 3 Meltas, Demolition Charge, Voxcaster, 4 Lasguns Chimera
Troops: Platoon: PCS: Commander, Voxcaster, Sniper, Missile Launcher HWT
Troops: Platoon: Infantry x3: Sergeant, Voxcaster, 6 Lasguns, Auto Cannon HWT
Troops: SWT x2: 3 Lascannon
Troops: SWT x2: 3 Flamers, 3 Lasguns, Vendetta (From Fast)
Fast: Hellhound
Fast: Vendetta x2 (used for flamer SWTs)
Heavy: LRBT x2
Heavy: LRBT Plasma
This leaves:
2 Chimeras
1 Hellhound
1 Missile Launcher HWT
1 Mortar HWT
1 Sentinel
47 Lasguns
1 Medic
3 Melta
6 Flamers
4 Voxcasters
12 Sergeant
4 Banners Yarrick
Creed
Commissar
Nork
Blob up the infantry, and you can drop some Voxs, as it affects the whole 30-man squad. The Commissar helps anyone you can put him with.
Drop the flamers on objectives, and use the demo vets as tank-hunters. You can make a Melta SWT for a Chimera, or swap it out of a Vendetta/Valkyrie.
You have room to make more Vet squads, upgrade the command squads, or swap out some other stuff.
