Hi there, I'm contemplating getting my fort building on with my imperial guard and I've been looking through the stronghold stuff, I can't seem to find minefields. I recall in editions past you could get them, is there still a way to take them? Tank traps seem like a good alternative but mines seem really thematic

They are no longer in the main rule book and mention to them was removed from the Ork codex. It seems they may be gone from terrain that has official rules.

You could declare them to be your own terrain with custom rules. Something like:

Minefield
Minefields are dangerous but not difficult terrain. Infantry models that move through minefields take a wound on a result of either 1 or 2 for their dangerous terrain.

Veteran guardsmen can upgrade to forward sentries which gives them snare mines, they don't do damage though.

They still have rules in Planetstrike and Cities of Death. I was just looking through the 5th ed rulebook on a whim and came across rules for them - any unit within 3" of a mine marker takes a dangerous and difficult terrain test, and all wounds are pinning.

Reavers get cluster caltrops but again they don't act like convential mines.
