I think I can fit just one more tank/flyer in my Imperial Guard Toolbox. (No literally, I use a tool box to haul the guard around.)

I have the following: (Slashes denote choices allowed by the joys of magnetization.)

Leman Russ Vanquisher/Punisher
Leman Russ Vanquisher/Demolisher
Leman Russ Executioner X2
Chimera X2
Wyvern X2
Wyvern/Hydra
Manticore
Basilisk
Vendetta

What would you choose for this precious last spot?

A Leman Russ for durable firepower? and if so which one/s?
A Chimera/Hellhound for more Veteran squads or a fast tank with a big flamer?
A Vendetta/Valkerie for options and air superiority?
Some forgeworld love? I think a Vulture would be cool, Probably magnetize it up with loads of options.
Or something else?

Actually, some psykers to take the Divination primaris. Cast it on your Executioners so that they can re-roll 1s with the Gets Hot roll. I would recommend using Inquisition, so that you can make what amounts to a guard squad in chimera (Acolytes with dedicated Chimer transport) with a psyker attached. Take flamers on the Acolytes as a close defence unit, since you'll want to keep it back from the front line anyway to cast the primaris power on the tanks. Flamers will work well against the deepstrike counter to this army. Something like Inquisitor + 3x servo skull (super useful!) and inquisitorial retinue squad of at least 3 acolytes + 3x flamer + 2x psyker + Chimera. Should come out to about 140-150 points.

No Hellhounds? Such a classic vehicle

A Vulture or LR Eradicator. Eradicators are dirt cheap and a S6 Large Blast with Ignores Cover has a good number of uses.

I wonder if I can make a vendetta/Valkyrie/vulture. My current vendetta is made so the wings and tail come off for transportation. If I made the wings, tail, and cockpit removable and two bodies and three sets of guns it might work.

Yeah, the Vulture, no question. No IG army is complete without one.
