So I'm finally starting AoS. I printed out the Dwarf Warscrolls, and was surprised to find Thorek Ironbrow in it. I though that Thorek Ironbrow was killed during the End Times (along with hundreds of others), yet he's in the Warscrolls.

Did Thorek Ironbrow die during the End Times? Or what?

No. They definitely aren't.

The vast majority of characters who died in the end times are presumed permanently dead. The only exceptions are the 8 Incarnates, a large amount of Chaos characters (they did win after all), and quite a few undead characters.

The reason a lot of the old and dead named characters have warscolls is because they were intended to allow players to field their existing armies in AoS. Likely the characters will not transition to the new fluff and updated warscrolls, leaving the pdfs released at the beginning of AoS as the most up to date rules for those characters.
