So I'm looking to get into this. Apart from getting the core set, what else should I get as essential?

Honestly... Everything.
The core set will give you 7 decks, of 30 cards each. Thats enough to play casual games, get your friends into it, and start learning rules etc.
Each of the warlord cycles has a new Warlord, his retinue and a new card or two for each existing faction. You get 3 of these new cards in the expansion.
Normal rules state that a deck must be a minimum of 50 cards, and no more than 3 of any one card. People tend to pick up 3 core sets, and each expansion. Giving them at least 3 copies of every card, meaning they can max out their deck should they choose. Although, to be honest, you can probably get away with 2 core sets for the most part.
The Great Devourer expansion will give you a new faction (Tyrannids), plus some cards for existing factions. Each tyrannid card you get comes in a multiple of 3 - so you only need one box. I've heard of people just getting the Great Devourer and being able to play competitive 'Nids right off the bat.
Cardgamedb.com has lots of information about Conquest.
If you're the first in your group to get into Conquest, go with a single core set. Build some decks and start giving demo games. I bought into Conquest after my second demo game.

I'm not the first, but it sounds like I'm one of few, so building the 7 decks may be the right option for now. Is the Great Devourer worth it for other army? I will get it eventually, as my friend loves Nids, but I want to know if its worth it for other armies. Ideally, I'll be running a Chaos or Ork deck, because Ultramarines are boring

You can probably hold off on the great devourer. If you want tyrannids, then it;s the one to get. Otherwise, I'd just think about getting a core set and testing the waters.
There are Ork and Chaos expansions. I forget the name of them, but you get yourself another Warlord for each faction. And you can play Ragnar, if you find Ultra's boring
